Dining
When the nearest outside restaurant is some twenty-minute drive mainly on unmade roads you need to ensure your offering is pretty spectacular to keep your guests coming back. So if you’re the owners and managers, it helps if you keep up to date with the latest tastes and trends by dining out every time you leave the island and count celebrity chefs amongst your friends. Throw in the huge personalities of all the staff both front and back of house then all that’s left is to choose the menus.
Treehouse Restaurant
Located on the hillside, the Treehouse restaurant serves Breakfast, Lunch and Dinner. There are two parts to the restaurant, the main part is open air (a roof, but no walls), and overlooks lush tropical foliage and the Caribbean Sea. The second part is for the brave, a wooden balcony that hugs the side of the main restaurant, but just a shade closer to nature. Look over the railing and you look down some 80 feet to the roots of the trees – conclusive proof the restaurant is ‘tree top’. The cuisine is a blend of Caribbean and other tropical world cuisine experiences. The dinner menu changes daily and is served in a romantic candlelit ambiance.
Emerald’s
Serving only vegetarian cuisine, Emeralds showcases the freshest and tastiest organic produce which is grown on the hotel’s own farm, the Emerald Estate in the Soufriere hills.
Trou Au Diable Restaurant
Located right on the beach and serves lunch and dinner. The lunch menu is massive, so eat as little or as much as you like, but don’t forget to try the soup.
Once a week all guests enjoy a special Caribbean culinary evening in the Trou au Diable restaurant, which commences with a cocktail reception at 6 30 p.m. The atmosphere is festive with the entire stretch of beach in front of the restaurant lit up by flambeau candles.

Bars
The three bars are located on the hillside close to the main restaurant, on the main Anse Chastanet beach and the last is located on Anse Mamin beach. The two main bars are open daily and close late.
